Mix and bake, that’s all you need to do to make this Cheesy Salsa Chicken and Rice. It’s a recipe you need to add to your menu plan and one the entire family is going to love.
Casseroles are a favorite of mine! I love recipes that I can dump into a dish and just pop in the oven. The less work the better. This Cheesy Salsa Chicken and Rice is really simple and easy to make and it’s a family favorite.
*Pictures and recipe have been updated from the original. I precooked the chicken and placed it in the casserole instead of placing chicken breast on top. I found that it cooks much better.
How to Make Cheesy Salsa Chicken and Rice:
Time to get cooking. Let’s start by preheating the oven to 350 then prepare a 9×13 casserole dish with no-stick cooking spray and set it aside.
To your casserole dish add your chicken, rice (uncooked), cream of chicken soup, cheese whiz, salsa, taco seasoning, and water.
Mix, mix, mix until all ingredients are well combined. Top mixed casserole with shredded cheese. Bake for 35-40 minutes until cooked through and bubbly.
Cooking Tips:
Save time with this recipe by using a rotisserie chicken or using leftover chicken from my all-purpose slow cooker chicken recipe.
When I have recipes that call for cooked and shredded chicken I make the chicken all together a few days before. I can store it in the fridge and it makes dinner time a lot easier.

Ingredients
- 3 cups Chicken, (cooked and shredded)
- 2 cups Instant rice
- 10.5 oz Cream of chicken soup
- 10 oz Cheese whiz
- 1 cup Salsa
- 1 oz Taco seasoning
- 1 cup Taco blend cheese, (shredded)
- 1 cup Water
- 1 tablespoon Cilantro, (optional for garnish)
