    Chocolate Chip Oatmeal Bars

    These Chocolate Chip Oatmeal Bars are made with rolled oats and a lot of sweet chocolate chips. A recipe that can be served any time of the day. 

    Chocolate Chip Oatmeal Bars

    These Chocolate Chip Oatmeal Bars have to be one of my favorite desserts. Served warm with a big glass of cold milk, it doesn't get much better than that. Plus it has oatmeal in it which is a breakfast food which means these can also be served for breakfast. And know that I think I of I have eaten oatmeal for both lunch and dinner. 🙂 I know I can't be the only one that thinks this logically.

    Chocolate Chip Oatmeal Bars

    Chocolate Chip Oatmeal Bars Instructions:

    Ready to start cooking? Start by preheating your oven to 350 degrees. Prepare a baking dish with parchment paper. Leaving overhang to make it easy to pull them out. Cream together butter, brown sugar, and sugar in a stand mixer. Mix in eggs one at a time then vanilla extract. In a separate bowl whisk together flour, baking powder, baking soda, salt, and oats. Add these to your wet ingredients. Fold in chocolate chips then spread into your prepared baking dish. Bake for 30-35 minutes or until cooked through and golden brown. Use parchment paper over hand to remove from baking dish. Slice into squares and serve.

    Cooking Tip:

    When cooking these bar I found that using a nonstick cooking spray, oil, or even butter, made on the casserole dish made them overly oily and soggy. My bar always ended up limp and felt undercooked. I skip that now and place parchment paper inside instead and it works great.

    Ingredients
      

    • 1 cup Butter (softened)
    • 1 cup Brown sugar
    • ½ cup Sugar
    • 2 Eggs
    • 2 teaspoons Vanilla extract
    • 1 ½ cup All-purpose flour
    • 1 teaspoon Baking powder
    • 1 teaspoon Baking soda
    • ½ teaspoon Salt
    • 2 cup Rolled oats
    • 1 ¾ cup Semi sweet chocolate chips

    Instructions
     

    • Preheat oven to 350 degrees. Prepare a baking dish with parchment paper. Leaving overhang to make it easy to pull them out. 
    • Cream together butter, brown sugar, and sugar in a stand mixer (or with a hand mixer and a large mixing bowl). Mix in eggs one at a time then vanilla extract. 
    • In a separate bowl whisk together flour, baking powder, baking soda, salt, and oats. Add these to your wet ingredients. 
    • Fold in chocolate chips then spread into your prepared baking dish. Bake for 30-35 minutes or until cooked through and golden brown. Use parchment paper over hand to remove from baking dish. Slice into squares and serve.
