    Chocolate Chip Pancakes Mini Muffins

    Pancakes for breakfast are always a good idea and these Chocolate Chip Pancakes Mini Muffins are so simple to make and will easily become your favorite pancake recipe.

    Chocolate Chip Pancakes Mini Muffins

    These Chocolate Chip Pancakes Mini Muffins, you can eat pancakes all the time. Just spoon your mix into a mini muffin pan and pop in the oven while you're getting ready and 10 minutes later pancakes are ready to eat!

     I, of course, topped mine with whipped cream! I mean chocolate chip pancakes have to have whipped cream, I'm pretty sure that's a rule and I'm not here to questions it.

    How to make Chocolate Chip Pancakes Mini Muffins:

     Step one: Start by preheating your oven to 400 degrees F.

    Step two: Sift together flour, baking powder, baking soda, and sugar. Once shifted (or whisked) together then set them aside.

    Step three:  In a separate bowl beat egg then add milk and melted butter.

    Tip: Make sure that you are not adding your egg right to the warm butter! You don't want scrambled eggs in your muffins. I would add the butter to a bowl with the cold mix and mix first then add in the egg.

    Step four: Now mix together wet and dry ingredients and fold in chocolate chips.

    Step five: Pour pancake mix into mini muffin pan and bake.

    Step six:  Remove from oven and allow to cool for 1-2 minutes.

    Ingredients
      

    • 1 cup all-purpose flour
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • 1 tablespoon sugar
    • 1 large egg
    • 1 cup milk
    • 1 tablespoon butter (melted)
    • ½ cup chocolate chips

    Instructions
