Chocolate Chip Pancakes Mini Muffins

These Chocolate Chip Pancakes Mini Muffins, you can eat pancakes all the time. Just spoon your mix into a mini muffin pan and pop in the oven while you’re getting ready and 10 minutes later pancakes are ready to eat!

I, of course, topped mine with whipped cream! I mean chocolate chip pancakes have to have whipped cream, I’m pretty sure that’s a rule and I’m not here to questions it.

How to make Chocolate Chip Pancakes Mini Muffins:

Step one: Start by preheating your oven to 400 degrees F.

Step two: Sift together flour, baking powder, baking soda, and sugar. Once shifted (or whisked) together then set them aside.

Step three:  In a separate bowl beat egg then add milk and melted butter.

Tip: Make sure that you are not adding your egg right to the warm butter! You don’t want scrambled eggs in your muffins. I would add the butter to a bowl with the cold mix and mix first then add in the egg.

Step four: Now mix together wet and dry ingredients and fold in chocolate chips.

Step five: Pour pancake mix into mini muffin pan and bake.

Step six:  Remove from oven and allow to cool for 1-2 minutes.
