    Chocolate Chip Pumpkin Bars

    These Chocolate Chip Pumpkin Bars are so soft and moist. They are full of pumpkin flavor and loaded with chocolate. One of the best fall recipes!

    If you love pumpkin you have to try these Chocolate Chip Pumpkin Bars. They are so good and everyone in my family loved them. 

    How to make Chocolate Chip Pumpkin Bars:

    Step one: Get started by preheating your oven to 350 degrees. Then prepare a 9x13 casserole dish with nonstick cooking spray or parchment paper.

    Using parchment paper will help remove the bars after baking. I usually remove the entire thing and then cut to get perfect squares.

    Step two: Next we will use an electric mixer to cream together butter and sugar. Once creamy and smooth add in the egg, vanilla extract, and pumpkin puree.

    Step three: Next we will work on the dry ingredients. In a separate bowl whisk together flour, baking soda, salt, and pumpkin pie spice

    Step four: Slowly add your dry ingredients to your wet until well combined. Fold in chocolate chips.

    Baking Directions:

    Step five: Place in your prepared casserole dish. Bake for 35 minutes or until bars are cooked through. Remove from the oven and allow it to cool then serve and enjoy.

    • Tip: I saved a few chocolate chuncks to place on top of my bars before baking.

    Storing Directions:

    To store these Chocolate Chip Pumpkin Bars place them in an airtight container and store them at room temperature for 5-6 days.

    To freeze them place them in a large freezer bag and leave int he freezer for up to 6 months.

    Cooking Tip:

    To ensure that your bars are cooked try using a toothpick to insert and see if it comes out clean without uncooked dough. Chocolate will smear but there should not be dough on the toothpick when done.

    Ingredients
      

    • 1 cup unsalted butter softened
    • 1 ½ cups granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 cup pumpkin puree
    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • ¾ teaspoon salt
    • 1 tablespoon pumpkin pie spice
    • 2 cups chocolate chips or chunks

    Instructions
