These Chocolate Peanut Butter Cheesecake Bars are made with an Oreo crust, peanut butter cream cheese filling then finished off with a simple chocolate ganache. This recipe is no-bake and simple to make. 

Chocolate Peanut Butter Cheesecake Bars

This one is an oldie but a goodie. I recently updated this recipe and did a new crust and melted my chips instead of putting them inside the cheesecake and it turned out AMAZING!

My husband even said it was the best dessert I have ever made. The best part though is how easy it is to make!

No baking required just mixing and chilling. I made this again for Valentines Day and my husband and kids could hardly wait the chilling time to get their hands on them.

Making Chocolate Peanut Butter Cheesecake Bars:

Step one: Prepare your pan with foil and allow hang over on both sides of the pan. This will help you later when you are removing your bars from your casserole dish. You could also use parchment paper.

Step two: To make your crust you want to mix together crushed cookies with melted butter then place in the bottom of the prepared pan and press until the bottom of the pan is evenly coated.

Step three: Use an electric mixer and cream together cream cheese, vanilla extract, and creamy peanut butter. Once well combined and smooth add it to the top of the dish on top of the cookie crust. This will be your second layer.

Step four: For this step, you will want to use a microwave-safe bowl. Then us it to melt chocolate chips and heavy whipping cream. Mix together well then pour over peanut butter cream cheese in pan and spread out until even. This is your third and final layer.

Step five: Place in the fridge for at least 2 hours. You will know that your bars are done with your chocolate on top has hardened.

Serving tips:

Remove from fridge and use your foil hang over to remove from the pan. Once removed from the pan you will want to slice them into bars are squares. I was able to get 12 bars.

For this recipe, I used an 8×8 square pan.

Ingredients 

  • 18 oreo cookies, (crushed)
  • 3 tablespoons melted butter
  • 16 oz cream cheese, (softened)
  • 1 cup creamy peanut butter
  • 2 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy whipping cream
