This Cilantro Lime Brown Rice was the perfect side dish for our family taco night! It is a copycat recipe from a famous chain restaurant that you all will love!

My oldest son is a big fan of rice, but I have to admit I never was! I always added salsa to mine and felt like it needed more flavor! This Cilantro Lime Brown Rice recipe turned that all around for me! No more plain brown rice in this house again! Give it a try on taco night or serve it on the side of Salsa Chicken! Either way, your family will surely love the flavor this gives your brown rice!

How to make Cilantro Lime Brown Rice:

This rice is perfect for your favorite Mexican or Tex-Mex dinner. Cook your brown rice according to the package directions.

Once the rice has been cooked add in all the other ingredients and mix together well. Serve and enjoy!

Ingredient Notes:

  • Brown Rice: This recipe will work with any type rice you enjoy.
  • Salt
  • Oil: I use EVOO but you can use any oil you prefer.
  • Cilantro – chopped
  • Lime Juice – Fresh squeezed is the best option.

Directions:

Step One – Prepare rice according to directions.

  • Tip: Since some rice can take longer to cook or call for water then others I suggest to just look at your bag and follow those directions.

Step Two – When rice is cooked add salt, oil, chopped cilantro, and lime juice. Stir together until well combined.

How Much Juice is on One Lime:

You should be able to get about 2 tablespoons of juice from one lime.

How to Juice a Lime:

To make sure you get the most juice from your lime you can try rolling it on the counter before slicing it. You could even place it in the microwave for 10-15 seconds.

Once your lime is ready to be juiced start by cutting it in half. You can use a manual or electric juice.

If you don’t have those tools just use your hands or even a pair of tongs to squeeze out all the juice.

A little tip when making this Cilantro Lime Brown Rice:

Depending on how much you like lime you can always add more or less.

I love the bold flavor myself so served with lime wedges to squeeze on top.

If you want more lime flavor, try adding lime zest when mixing in your lime juice.

Do you use the stems of Cilantro?

I will chop all of the leaves of cilantro, but add a few stems. I will finely chop the stems as they have great flavor and it really adds to the rice.

Ingredients 

  • 1 cup brown rice
  • 1 teaspoon salt
  • 1 tablespoon oil
  • 1 tablespoon cilantro, (chopped)
  • 2 tablespoons lime juice, (fresh squeezed)

      Ingredients

      Water, 2 1/2 cups
      Brown Rice, 1 cup
      Butter, 1 tsp (optional)
      Lime, 1
      Salt, 1 tsp
      Cilantro, fresh and chopped, 1/2 cup
      Instructions

      Start by boiling your water and butter. Then add brown rice and reduce heat. Allow to simmer, covered, for 30-40 minutes.
      Fluff your rice with a fork when completely cooked and place in a serving dish.
      Squeeze lime juice into rice and mix in chopped cilantro though out.
      Garnish with cilantro and an extra lime and serve!
