This Coffee Cake is a classic. This recipe was passed down from my grandma and uses pancake mix as a base. It’s so simple to make and taste great.

This Coffee Cake is so simple to make. This recipe is just like my grandma would make with pancake mix. It gives the cake a great sweet taste and it’s so simple to make.

Directions

Step one: Get started by preheat the oven 375 degrees F. Then prepare a 2-quart baking dish with nonstick cooking spray.

Step two: Now mix together the pancake mix, milk, sugar, and egg until combined. Pour batter into your prepared baking dish.

Step three: Now we are going to prepare the streusel topping. Place all ingredients in a small mixing bowl. Break up the butter and mix until your topping is crumbly. Sprinkle on the top of your cake.

  • Tip: Make sure your butter is really cold. Leave it in the fridge until it’s time time to use. I usually use my fingers to mix and pinch until it’s crumbly. 

Baking Directions

Step four: Bake for 18-22 minutes or until cooked through. Add a fork or toothpick to the center to check for doneness. When it comes out clean it is cooked through. Slice, serve, and enjoy.

Ingredients 

Coffee Cake:

  • 2 cups pancake mix
  • 2/3 cup milk
  • 2 tablespoons sugar
  • 1 large egg

Streusel Topping:

  • 1/3 cup pancake mix
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup brown sugar
  • 2 tablespoons cold butter
