    Oatmeal Raisin Cookies

    This simple and delicious Oatmeal Raisin Cookies are the absolute best! Baked soft and chewy with oats and raisins this cookie is one of my favorites. 

    I'm not going to lie to you I totally ate these cookies for breakfast a few times. Oatmeal and raisin, what's more breakfast like then that! With a big cup of hot coffee they make the perfect breakfast 😉 There isn't much better then a soft and chewy warm cookie. No matter what time of day these Oatmeal Raisin Cookies hit the spot. Oatmeal raisin is a classic but if you would rather skip the raisin then check out my recipe for oatmeal chocolate chip cookies! Just as soft and chewy but with chocolate instead. They both are pretty awesome.

    How to make Oatmeal Raisin Cookies:

    Preheat your oven to 325 degrees F. Prepare a cooking sheet with non stick cooking spray or parchment paper and set aside. Cream together melted (and slightly cooled) butter with sugar and brown sugar in a stand mixer or in a large bowl with a hand mixer until well combined. Next beat in vanilla, cinnamon, egg, and egg yolk. Beat together for 2-3 minutes until smooth and creamy. In a separate bowl shift together flour, salt, and baking soda. Slowly mix this with your wet ingredients until well combined. Last fold in oats and raisins. Serve them and enjoy! Roll out balls of dough and place them on your prepared baking sheet. Bake for 10-12 minutes. Allow to cool for 3-4 minutes on the baking sheet before moving it to a cooling rack.

     

    Cooking Tip:

    After I make and roll out my dough I like to place a few raisins on top. It gives your cookies a great finished look.

    Ingredients
      

    • 1 ½ sticks Butter (melted and cooled)
    • ½ cup White sugar
    • 1 cup Brown sugar
    • 1 tablespoon Vanilla extract
    • 1 teaspoon Ground cinnamon
    • 1 Egg
    • 1 Egg yolk
    • 2 cups All purpose flour
    • ½ teaspoon Salt
    • ½ teaspoon Baking soda
    • 1 ½ cups Quick oats
    • 1 cup Raisins

    Instructions
