Pumpkin Bars on a serving board

When Fall is here, it is my favorite time of year! I love anything and everything Pumpkin, and making meals, snacks, and desserts with Pumpkin is my all time favorite.

These Pumpkin Bars with Cream Cheese Frosting are super good and soooo tasty!

    How to make Pumpkin Bars:

These Pumpkin Bars are really easy to make. As I have shared before I keep Pumpkin Puree on hand year round, so I have this in my pantry all the time.

As for the remaining ingredients they are all basically kitchen staples you probably already have in your cabinets. Mix you wet and dry ingredients separately and then combine and bake.

    Ingredients:

    Pumpkin Bar:

    • Unsalted Butter (softened)
    • Granulated Sugar
    • Egg
    • Pumpkin Puree
    • All-Purpose Flour
    • Baking Soda
    • Salt
    • Pumpkin Pie Spice

    Directions:

Step one: Start by preheating your oven to 350 degrees. Then go ahead and prepare a 9x13 casserole dish with nonstick cooking spray or parchment paper.

    • Don't skip the parchment paper! This will help you remove the bars later so you can cut them evenly.

Step two: Now in a stand mixer go ahead and cream together your  butter and sugar. Once it is creamy and smooth add in the egg, vanilla extract, and pumpkin puree.

Step three: In a separate bowl you can now whisk together your dry ingredients. The flour, baking soda, salt, and pumpkin pie spice.

Step four: Slowly add your dry ingredients to your wet until well combined. Place in your prepared casserole dish. Bake for 35 minutes or until bars are cooked through. Remove from the oven and allow to cool.

How to make cream cheese frosting:

Cream Cheese frosting is a classic recipe used in plenty of cupcake recipes. It's great on Red Velvet, Carrot Cake, or these Pumpkin Muffins.

Sweet yet tangy Cream Cheese frosting is one of the best frostings for a more savory cupcake like these Pumpkin Cupcakes. Cream Cheese Frosting is a Pumpkin Cupcakes best friend.

    Ingredients:

    Cream Cheese Frosting:

    • Cream Cheese (softened)
    • Unsalted Butter (softened)
    • Milk (as needed)
    • Vanilla Extract
    • Powdered Sugar

    Directions:

Step one: To make your frosting start with your stand mixer and cream together cream cheese and butter until smooth. Then add in milk and then vanilla and mix until combined.

Step two: Next add in powdered sugar and mix until smooth and creamy. Add more milk as needed.

Step three: Once cooled top your pumpkin bars with this cream cheese frosting and cut into bars.
