These simple Pumpkin Bars and baked and then onced cooked I top them with a homemade cream cheese frosting. The perfect fall dessert recipe.
How to make Pumpkin Bars:
Step one: Start by preheating your oven to 350 degrees. Then go ahead and prepare a 9x13 casserole dish with nonstick cooking spray or parcehment paper.
- Don't skip the parchment paper! This will help you remove the bars later so you can cut them evenly.
Step two: Now in a stand mixer go ahread and cream together your butter and sugar. Once it is creamy and smooth add in the egg, vanila extract, and pumpkin puree.
Step three: In a seperate bowl you can now whisk together your dry ingredients. The flour, baking soda, salt, and pumpkin pie spice.
Step four: Slowly add your dry ingredients to your wet until well combined. Place in your prepared casserike dish. Bake for 35 minutes or until bars are cooked through. Remove from the oven and allow to cool.
How to make cream cheese frosting:
Step one: To make your frosting start with your stand mixer and cream together cream cheese and butter until smooth. Then add in milk and then vanilla and mix until combined.
Step two: Next add in powdered sugar and mix until smooth and creamy. Add more milk as needed.
Step three: Once cooled top your pumpkin bars with this cream cheese frosting and cut into bars.

Ingredients
Pumpkin Bar:
- 1 cup unsalted butter (softened)
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¾ teaspoon salt
- 1 tablespoon pumpkin pie spice
Cream Cheese Frosting:
- 4 oz cream cheese (softened)
- 3 tablespoons unsalted butter (softened)
- 1 teaspoon milk (more as needed)
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
