    Scotcheroos is a classic dessert that everyone will love. Peanut Butter infused Rice Krispies topped with a chocolate/butterscotch layer that is to die for!

    We love our desserts. My kids love desserts like these Scotcheroos or Rice Krispies. They are always asking me to make these easy hand held desserts.

    How to make Scotcheroos:

    These Scotcheroos are a bit more complicated than regular Rice Krispies, but the end result is totally worth it!

    The reason I say the end result is worth it, is because peanut butter infused Rice Krispies topped with a layer of chocolate is making my mouth water just thinking about them!

    The reason I say they are a tad bit more complicated is because you really need to watch your heating up of the sugars and peanut butter. If you over boil them, they will one burn, and also cause your Scotcheroos to become very hard.

    Ingredients:

    • Rice Cereal
    • Creamy Peanut Butter
    • Sugar
    • Light Corn Syrup
    • Chocolate Chips
    • Butterscotch Chips

    Directions:

    Step One: Place your rice cereal in a large mixing bowl and set aside.
    Step Two: Prepare a 9x13 casserole dish with nonstick cooking spray and set aside.
    Step Three: Add peanut butter, sugar, and light corn syrup to a sauce pan. Bring to a boil while stirring constantly.
    • Cooking Tip: It is essential not to overboil at this step, which if you do will greatly affect the final product.

    Step Four: Pour the melted peanut butter over your rice cereal in your large mixing bowl and mix well.
    • Cooking Tip: Make sure the melted peanut butter/sugar mix does not cool too much before adding to the Rice Krispies or it will be hard to mix.

    Step Five: Pour into your prepared casserole dish and pat and press it in.

    Step Six: Place chocolate chips and butterscotch chips in a saucepan and melt over medium heat while stirring constantly. Once melted pour over rice cereal in casserole dish.

    Step Seven: Allow to set at room temperature for several minutes to allow chocolate to set. Then cut into squares and serve.

    • Cooking Tip: You can refrigerate for a few minutes to help the chocolate layer to set faster.

    This is a dessert you will love. Enjoy the rich flavors of peanut butter, chocolate and butterscotch of this dessert with a nice cold glass of milk.

    History of Scotcheroos:

    So no one really knows who came up with this recipe but it got the name solely from the butterscotch in the frosting layer. This is an original recipe that was found on Rice Krispies cereal boxes in the 1960s.

    Storing Scotcheroos:

    I do not recommend storing these in a refrigerator or they will become too hard to enjoy. Store them in a covered container on your counter at room temperature. These should last 10-12 days.

    Can these be frozen?

    Yes, you can freeze these Scotcheroos. either freeze the whole block before slicing, or slice the bars up before freezing. You will want to wrap them in plastic wrap before freezing.

    • 6 cups rice cereal
