Slow Cooker Lemon Chicken and Rice Soup

This week my mom and sister are visiting for spring break and I made this Slow Cooker Lemon Chicken and Rice Soup for them and they loved it. My sister kept saying it tasted like summer and because of the fresh taste she even said it would be perfect served as a cold soup. This one could be a close second to my favorite soup recipe, taco soup.
This recipe is simple to make and full of amazing flavor. Add all of your ingredients into your slow cooker in the order listed then allow to cook. Once everything is cooked then remove chicken and shred. Add shredded chicken back to your slow cooker and you are ready to serve.
Cooking in a slow cooker is pretty easy but it can be tricky when it comes to the time the meal is done. Slow cookers have evolved over the years so your make and model will change the cooking time. My 2017 slow cooker brings my food to a boil while on high while my older slow cooker will take 1-2 hours longer to cook the same meal. Check your slow cooker often once it is near the end of time. Most importantly when cooking with meat use a thermistor to test and make sure it has reached the safe temperature.

- 1.5 pounds Chicken breast (boneless and skinless)
- 2 cups Carrots (chopped)
- 1 tablespoon Garlic (minced)
- 3/4 cup White onion (chopped)
- 1 cup Celery (chopped)
- 8 cups Broth
- 1 teaspoon Thyme (dried)
- 1/2 teaspoon Salt (or to taste)
- 1 teaspoon Oregano (dried)
- 1 cup Brown rice
- 1 Lemon (juice and zest)
Add all ingredients to the slow cooker and mix. Cook on low for 6-8 hours or on high for 4-5 hours.
Remove chicken and shred then return to slow cooker. Serve and enjoy.
