A slow cooker side dish makes dinner time simple. These Slow Cooker Sour Cream and Chive Mashed Potatoes are so easy to make and full of flavor.
Mashed potatoes are my all time favorite side dish and when they can be made in the slow cooker, well I call that true love. 😉
Honestly though for a busy mama any easy recipe is true love. Tossing these potatoes in the slow cooker then finishing them up when the rest of dinner is ready saves me so much time.
Peel and wash potatoes then dice. Add diced potatoes to slow cooker. Season with salt and pepper. Pour chicken broth into slow cooker. Cook on high for 3-4 hours or on low for 5-6 hours. Potatoes should be tender. Add sour cream and butter and use a potato masher to mash potatoes. Add fresh minced chives. Add more seasoning as needed. Serve and enjoy.

Ingredients
- 3 pound Russet potatoes
- 1/2 teaspoon Salt, (or to taste)
- 1/8 teaspoon Pepper, (or to taste)
- 3/4 cup Chicken broth
- 1/2 cup Sour cream
- 1/4 cup Butter
- 3 tablespoons Chives
Instructions
