Spinach and Mozzarella Low Carb Breakfast Casserole

Eating a healthy breakfast can be hard. Most the time it’s grabbing a bowl of cereal before I head out the door.

A healthy breakfast doesn’t have to be difficult though this Spinach and Mozzarella Low Carb Breakfast Casserole is so easy to make and can even be made the night before.

I love that I can make ahead this low carb breakfast casserole. I skipped the potatoes and bread and made this with just veggies, eggs, and cheese.

I’ve made several different versions on this low carb breakfast casserole and I have to say this one is my favorite.

Spinach and Mozzarella Low Carb Breakfast Casserole

Time to get cooking! Start by preheating your oven to 350 degrees F and prepare a baking dish with non-stick cooking spray and set aside.

Ground and cook sausage in a skillet until fully cooked. Add in your garlic and onions to the skillet and sauté with sausage for 2 minutes. Place this in your prepared baking dish.

Add chopped spinach and 1/2 cup of shredded mozzarella cheese. In a separate bowl whisk eggs with salt and pepper.

Pour egg wash into baking dish and gently mix to make sure eggs are covering the entire dish.

Top with remaining cheese and bake for 45 minutes or until a fork can come out clean and eggs are cooked all the way through.

Can I make this Spinach and Mozzarella Low Carb Breakfast Casserole with Sausage the night before?

This low carb breakfast casserole recipe can easily be made ahead the night before for a quick breakfast in the morning. I cook according to directions the night before until eggs are solid.

I allow it to cool then place foil on top and place it in the fridge. The next morning preheat your oven again to 320 degrees and allow to cook until warmed.

If you want to freeze this Spinach and Mozzarella Low Carb Breakfast Casserole I cook according to direction, allow to cool, cut into squares, and wrap each in foil.

Place in the freezer for a quick slice in the morning. Microwave for 30 seconds at a time until warm. This really is the best low carb breakfast casserole.

Ingredients 

  • 1 pound ground breakfast sausage
  • 1 tablespoon minced garlic
  • 1/2 cup yellow onion, (chopped)
  • 3 cups baby spinach, (chopped)
