Slow Cooker Loaded Baked Potato Soup

Ingredients

  • 4 large russet potatoes
  • 1 cup onion (chopped)
  • 3 1/2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup sour cream
  • 1 cup heavy cream
  • 1 1/2 cup Bacon (cooked and crumbled)
  • 1 1/2 cup Cheddar cheese (shredded
  • 1/2 cup Green onions (diced)

Instructions

  1. Peel and dice potatoes and then add them to the slow cooker with onions and chicken broth. Cook on high for 3-4 hours or low for 5-6 hours until your potatoes are tender.
  2. Use a masher to mash potatoes. Season with salt and pepper then mix in sour cream and heavy cream Add 1 cup of cooked bacon and 1 cup of cheese to the soup before serving.

  3. Add 1 cup of cooked bacon and 1 cup of cheese and mix to combine.

  4. Serve topped with remaining bacon, cheese, and diced green onions.
