Taco Stuffed Baked Potatoes

Ingredients
  

  • 4 large Russet potatoes
  • 1 pound Ground beef
  • 1 oz Taco seasoning
  • 1 cup Queso sauce
  • ½ cup Sour cream
  • 1 cup Diced tomatoes
  • cup Green onions

Instructions
 

  • Preheat your oven to 400 degrees F. Wash potatoes then pat dry, Puncture potatoes in several places with a fork. Wrap each potato in alumni foil and bake for 1 hour.
  • While potatoes cook start cooking ground beef in a skillet, drain grease, and season with taco seasoning.
  • Warm Queso according to package directions. 
  • When potatoes are cooked allow to cool slightly until you can handle them then slice down the mild. Stuff with ground beef, pour on Queso, top with tomatoes, green onions, and sour cream.
