Classic Apple Pie

A Classic Apple Pie. One you will make year after year. Homemade pie crust and sweet apples make this classic pie amazing.

Ingredients
  

Crust:

  • 1 homemade or a store-bought crust.

Filling:

  • 8 cups Granny Smith apples. cored (peeled and sliced)
  • 2 tbsp lemon juice
  • 1 cup sugar
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 egg yolk
  • 1 tbsp water

Instructions
 

  • Preheat oven to 375 degrees F.
  • In a large bowl mix together apples, lemon juice, sugar, brown sugar, flour, cinnamon, and nutmeg. Allow to sit for at least 30 minutes.
  • Roll out and place ½ of the dough into the bottom of a pie pan. Use a slotted spoon to spoon in the apple mixture then place the other ½ of dough on top.
  • Whisk together water and egg yolk and brush on top of the crust.
  • Bake for 50 minutes or until golden brown. To keep your edges from burning add foil around the edges of the pie.

Notes

  • Pro Tip: Sugar will draw out a lot of the water in the apples. Allowing it to set will help your pie to not be too watery since most of it will have left the apples already. The longer it sits the better. This is the best time to work on your crust if you are making it from scratch. 
Apple Pie Top Crust:
  • Classic: For a simple pie crust just lay it on top, seal the edges, and slice four holes in the top so air can vent. Without a place to vent air, your top crust will rise and leave a large gap between the pie filling and the crust.
  • Lattice: This is what looks like the woven apple pie crust. To make this I like rolling out my dough and using a pizza cutter to slice thick stripes. Then I weave them on top and under each other to get the lattice look.
  • Dutch: Dutch apple pie would not have a top crust but instead a brown sugar and butter crumble. If you want to make this type of crust then read my recipe for a Dutch Apple Pie.
