Cheesecake Cookies

  • Cream cheese room temperature, 8 oz (1 block)
  • Butter room temperature, 1 cup (2 sticks)
  • Sugar 1 1/2 cup
  • Vanilla extract 2 tsp
  • Flour 2 cups
  • Graham crackers crumbs 1 cup (divided)


  1. Preheat oven to 350 degrees F. Prepare a baking sheet with cooking spray or parchment paper and set aside.
  2. In a stand mixer or in a large bowl with a hand mixer cream together cream cheese and butter. Add sugar and vanilla and mix until well combined.
  3. Mix in flour and 1/2 cup graham crackers crumbs until well combined. Place remaining graham crackers crumbs on a plate. Roll out 1" balls of dough and roll in graham crackers crumbs.
  4. Place cooking on a baking sheet and very gently press down. Cook for 11-14 minutes and allow to cool completely. Place in the fridge and allow to chill before serving.
