Ingredients

  • 1 cup Jasmine rice
  • 1 teaspoon Salt
  • 1 tablespoon Oil
  • 1 tablespoon Cilantro (chopped)
  • 2 tablespoons Lime juice (fresh squeezed)

Instructions

  • Prepare rice according to directions.
  • When rice is cooked add salt, oil, chopped cilantro, and lime juice. Stir together until well combined.

Notes

Do you use the stems of Cilantro?
I will chop all of the leaves of cilantro, but add a few stems. I will finely chop the stems as they have great flavor and it really adds to the rice.
How Much Juice is on One Lime:
You should be able to get about 2 tablespoons of juice from one lime.
How to Juice a Lime:
To make sure you get the most juice from your lime you can try rolling it on the counter before slicing it. You could even place it in the microwave for 10-15 seconds.
Once your lime is ready to be juiced start by cutting it in half. You can use a manual or electric juice. If you don't have those tools just use your hands or even a pair of tongs to squeeze out all the juice.
