Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon sugar
  • 1 large egg
  • 1 cup milk
  • 1 tablespoon butter (melted)
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 400 degrees F.
  2. Sift together flour, baking powder, baking soda, and sugar. In a separate bowl beat egg then add milk and melted butter. Now mix together wet and dry ingredients. Fold in chocolate chips.
  3. Pour pancake mix into mini muffin pan and bake for 10-12 minutes. Remove from oven and allow to cool for 1-2 minutes.
  4. Optional: Serve with maple syrup and whipped cream.
