- ½ cup Butter (unsalted and soften)
- ¾ cups Brown sugar (packed)
- 1 teaspoon Vanilla extract
- 1 Egg
- 1 box Instant vanilla pudding (3.4 oz - just the powder)
- ¼ teaspoon Salt
- ½ teaspoon Baking soda
- 1 ¼ cups All purpose flour
- 1 cup Red, white, and blue M&Ms white, and, blue M&Ms, 1 cup (divided)
Cream butter and sugar together in a stand mixer or in a large bowl with a hand mixer. Mix in egg and vanilla and mix until smooth.
Add dry pudding mix, salt, baking soda, and flour until well combined. Add ¾ cups of M&M and mix into dough well. Allow cooling in the fridge for 1-2 hours.
Preheat oven to 350 degrees F and prepare a baking dish with nonstick spray or parchment paper. Roll chilled dough into balls and place on prepared baking sheet. Place remaining M&MS on top of each cookie. Bake for 9-11 minutes and allow to cool for 5 minutes on the baking sheet before allowing to fully cool on a rack.
