- 2 breast Chicken (skinless and boneless)
- 3 cups Diced bell peppers
- 1 cup Diced onion
- 2 cups Salsa
- 1 can Corn (drained)
- 1 oz Fajita seasoning (or to taste)
- 5 cups Chicken Broth
Add all ingredients to a large soup pot. Bring to a boil then reduce heat and cover. Allow to cook until chicken is cooked through (about 20-30 minutes time will vary depending on the size of your chicken breast)
Remove cooked chicken and shredded. Add chicken back to the pot and allow to cook for 10-15 more minutes.
Serve topped with sour cream, tortilla chips, cilantro, or avocado slices.
