Wash and diced potatoes. Place in a large mixing bowl. Drizzle and toss in olive oil until coated. Add ranch seasoning, bacon, and ¾ cup cheese. Toss again until potatoes are coated.
Add potatoes to 4 foil squares. Top each with remaining cheese. Lift foil on each side to meet and cover potatoes then seal the edges.
Grill:
Grill on medium heat for 30-35 minutes turning half way through.
Oven:
Place foil packs on a baking sheet and bake at 400 degrees for 30-35 minutes.
