Ingredients
  

  • 1.5 pounds Chicken breast (boneless and skinless)
  • 2 cups Carrots (chopped)
  • 1 tablespoon Garlic (minced)
  • ¾ cup White onion (chopped)
  • 1 cup Celery (chopped)
  • 8 cups Broth
  • 1 teaspoon Thyme (dried)
  • ½ teaspoon Salt (or to taste)
  • 1 teaspoon Oregano (dried)
  • 1 cup Brown rice
  • 1 Lemon (juice and zest)

Instructions
 

  • Add all ingredients to the slow cooker and mix. Cook on low for 6-8 hours or on high for 4-5 hours. 
  • Remove chicken and shred then return to slow cooker. Serve and enjoy.
