I love this creamy Potato Soup Recipe.

  • 8 cups russest potatoes (peeled and diced)
  • 1/2 cup onion (diced)
  • 32 oz chicken broth
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper (or to taste)
  • 1 1/2 cups half and half
  • 1/2 cup sour cream
  • 2 tablespoons butter

Optional toppings: cheese, bacon, and green onion.


  1. Place pealed and diced and onions into a large pot and cover with chicken broth. Allow to cook until potatoes are tender. 

  2. Use a potato mashed to start to mash potatoes. Once potatoes are tender add in remaining ingredients in the order listen. 

  3. For a thicker soup serve now. For a creamy soup (like in the pictures) continue to mash or use an immersion blender. 

  4. Serve topped with shredded cheddar cheese, cooked and crumbled bacon, and diced green onions.
