Santa Fe Chicken Foil Packets

These Santa Fe Chicken Foil Packets are the perfect dinner recipe. They are so simple to make and simple to clean up. My entire family loves this recipe. You can bake them in the oven or toss them on the grill.

Ingredients
  

  • 4 large chicken breast (boneless and skinless)
  • 1 teaspoon cumin
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 10 oz Rotel (drained well)
  • 15 oz corn (drained well)
  • 15 oz black beans (drained and rinsed well)
  • 1 cup Colby jack cheese (shredded)

Instructions
 

  • Preheat oven to 375 degrees. 
  • Season chicken with cumin, onion, powder, and garlic powder. Place each chicken it separate pieces of foil and roll up the sides. Place each foil back in a casserole dish together. 
  • Evenly add Rotel, corn, and black beans into each foil packet. Top each foil pack with shredded cheese. Bake for 30-35 minutes until chicken is cooked through. 

Notes

If you don't have these seasonings you could also use a taco seasoning.  
I bring the foil together at the top but do not seal completely. 

Grilling Instructions:

Preheat your grill on medium/high heat. Prepare foil packets according to instructions then place foil packers directly on your grill. Allow to cook for 20-25 minutes or until chicken is cooked through and at a safe temperature.
