Ingredients

Cake:

  • 2 cups all-purpose flour
  • 1 tablespoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/4 cup vegetable oil
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Topping:

  • 2 tablespoons unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup pecans
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350 degrees. Prepare a 11x7 baking dish with nonstick cooking spray and set aside.

  2. In a small mixing bowl whisk your all-purpose flour, pumpkin pie spice, baking soda, and salt. Then set aside.

  3. In a stand mixer combine pumpkin puree, vegetable oil, sugar, vanilla extract, and milk. Slowly mix in dry ingredients to your wet and mix until combined. Add this to your prepared dish.

  4. Add all your topping ingredients into a bowl. Mix well to combine and use fingers to pinch and make a crumble. Once well combined add this to the top of your casserole.

  5. Bake for 30-40 minutes or until cake is baked through. Slice and serve.
