Bacon and Corn Casserole

This Bacon and Corn Casserole is a simple side dish loaded with flavor. Made with cream corn, bacon, and cornbread, it's a recipe you will want to try.

Ingredients
  

  • 14.75 oz sweet corn (canned)
  • 14.75 oz cream-style corn (canned)
  • 1 cup sour cream
  • cup butter (unsalted and melted)
  • 6.5 oz cornbread mix
  • 6 slices bacon (cooked and crumbled)
  • 1 cup cheddar cheese (shredded)

Instructions
 

  • Preheat oven to 350 degrees. Prepare a 3-quart baking dish with nonstick cooking spray.
  • In a medium bowl mix sweet corn, cream-style corn, sour cream, and melted butter. Once mixed add in cornbread mix and mix again until combined.
  • Place in your prepared baking dish and spread out evenly. Bake for 35-40 minutes until golden brown.
  • Remove corn casserole from the oven and top with bacon and cheese. Place back in the oven for 5-10 minutes until cheese is melted. Once the cheese is melted remove from the oven and serve.

Notes

How to make Bacon and Corn Casserole Ahead of Time:

Since this is a recipe I like to serve for Holiday dinners I love to make it ahead of time. To make it ahead just mix the ingredients and place them in your prepared casserole dish. Cover with foil and place in the fridge for up to 24 hours. 
When you are ready to bake remove it from the fridge and remove the foil. Bake at the same temperature but add 2-3 minutes on to the cooking time.
