Easy Beef Enchiladas

These Easy Beef Enchiladas are so simple to make and taste amazing. Flour tortillas filled with ground beef. It's all baked in the oven for less than 30 minutes.

- 1 lb lean ground beef
- 10 oz red enchilada sauce
- 4.5 oz chopped green chiles
- 8 flour tortillas (6 inch)
- 2 cups shredded cheddar cheese
Preheat your oven to 375°F. Prepare a baking dish with nonstick cooking spray.
Cook and crumble ground beef until cooked through. Drain ground beef then add in ½ cup of the enchilada sauce and green chiles to your skillet.
Pour another ½ cup of enchilada sauce to the bottom of your prepared baking dish.
Next prepare your enchilada by place a spoonful or two of the beef mixture and shredded cheese (save some cheese for later) down the center of a flour tortilla. Roll the filled tortilla tightly and then place it in your baking dish. (tip seam down). Do this with each flour tortilla.
Top your enchiladas with the remaining sauce and shredded cheese. Place in the oven to bake for 20-25 minutes.
- I used a 3-qt casserole dish for this recipe.
- To keep your enchiladas from opening make sure that once rolled you place them in the casserole dish seam down.
