This Honey Mustard Pecan Chicken dinner is a winner. It's so simple to make and a great way to change up your chicken dinner.

Ingredients
  

  • 4 chicken breast (boneless and skinless)
  • 1 cup pecans (finely chopped)
  • cup panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • salt and pepper (to taste)
  • ¾ cup honey mustard dressing
  • nonstick cooking spray

Instructions
 

  • Preheat oven to 425 degrees F. Prepare a baking dish with nonstick cooking spray and set it aside.
  • Mix crushed pecans with breadcrumbs, garlic powder, onion powder, salt, and pepper to taste. Place in a shallow bowl.
  • In a separate shallow bowl place ½ cup of honey mustard dressing.
  • To prepare chicken pound as needed to make all breast even thickness. This will help them to bake evenly.
  • Place chicken in honey mustard and coat. Allow excess to drip off then place in the pecans. Coat chicken in pecans then place in the prepared baking dish. Repeat with each chicken breast.
  • Spray chicken with nonstick cooking spray. Bake for 20-25 minutes or until chicken is cooked through and the internal temperature has reached 165 degrees F.
  • Serve chicken and drizzle on remaining honey mustard.

Notes

Pounding your chicken: Make sure you don't skip this part. It plays a huge role in the baking process to make sure all your chicken is cooked through. 
How to pound chicken: To pound your chicken place the chicken breast in a large baggy. Use any heavy option you have in the kitchen to pound your chicken breast until they are all even in size. I usually use my rolling pin but you can use a meat mattel or even a heavy skillet. 
Crushed Pecans: Make sure they are crushed into really small pieces without being a powder. While you want them small you also want that crunch in each bite.
Homemade Honey Mustard: You can use store-bought or homemade money mustard. If you have a homemade recipe you love use it instead.
