Turkey Noodle Soup

This Turkey Noodle Soup is the perfect way to put your leftover Thanksgiving Turkey to good use! Tastes just like my Classic Chicken Noodle soup but made with turkey!

Ingredients
  

  • 1 tablespoon oil
  • 1 cup onion (chopped)
  • 1 ½ cups celery (chopped)
  • 2 cups carrots (peeled and chopped)
  • 2 tablespoons garlic (minced)
  • 1 cup water
  • 6 cups chicken broth
  • 1 teaspoon thyme (dried)
  • 1 teaspoon rosemary (dried)
  • ½ teaspoon oregano (dried)
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 12 oz egg noodles
  • 1 pound turkey breast (cooked and chopped into chunks)

Instructions
 

  • Heat oil in a large pot over medium heat. Add in chopped onion, celery, and carrots. Sauté for 5 minutes then add in minced garlic.
  • Add water and broth to your pot and sprinkle in all seasonings. Bring to a boil then reduce heat and allow to simmer for 5 minutes until vegetables are becoming tender.
  • Add in egg noodles and allow to cook for 10 minutes until noodles are cooked.
  • Last add in turkey and allow to cook until turkey and warmed. Add more seasoning to taste than serve and enjoy.
