- 4 large russet potatoes
- 1 cup onion (chopped)
- 3 ½ cups chicken broth
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup sour cream
- 1 cup heavy cream
- 1 ½ cup Bacon (cooked and crumbled)
- 1 ½ cup Cheddar cheese (shredded
- ½ cup Green onions (diced)
Peel and dice potatoes and then add them to the slow cooker with onions and chicken broth. Cook on high for 3-4 hours or low for 5-6 hours until your potatoes are tender.
Use a masher to mash potatoes. Season with salt and pepper then mix in sour cream and heavy cream Add 1 cup of cooked bacon and 1 cup of cheese to the soup before serving.
Add 1 cup of cooked bacon and 1 cup of cheese and mix to combine.
Serve topped with remaining bacon, cheese, and diced green onions.
The best way to cook bacon:
Preheat oven to 400° F. Prepare a baking sheet with aluminum foil and set aside. Lay bacon out on prepared baking dish in a single layer.
Bake until crispy. Lay on paper towels to remove extra grease then crumble for this recipe.
