Turning my favorite dessert into a yummy cookie. These Cheesecake Cookies is soft and creamy in the middle and rolled in crushed graham crackers.
- 8 oz Cream cheese room temperature, (1 block)
- 1 cup Butter room temperature, (2 sticks)
- 1.5 cups Sugar
- 2 tsp Vanilla extract
- 2 cups Flour
- 1 cup Graham crackers crumbs (divided)
Preheat oven to 350 degrees F. Prepare a baking sheet with cooking spray or parchment paper and set aside.
In a stand mixer or in a large bowl with a hand mixer cream together cream cheese and butter. Add sugar and vanilla and mix until well combined.
Mix in flour and ½ cup graham crackers crumbs until well combined. Place remaining graham crackers crumbs on a plate. Roll out 1" balls of dough and roll in graham crackers crumbs.
Place cooking on a baking sheet and very gently press down. Cook for 11-14 minutes and allow to cool completely. Place in the fridge and allow to chill before serving.
