Pancakes for breakfast are always a good idea and these Chocolate Chip Pancakes Mini Muffins are so simple to make and will easily become your favorite pancake recipe.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon sugar
  • 1 large egg
  • 1 cup milk
  • 1 tablespoon butter (melted)
  • ½ cup chocolate chips

Instructions
 

  • Preheat oven to 400 degrees F.
  • Sift together flour, baking powder, baking soda, and sugar. In a separate bowl beat egg then add milk and melted butter. Now mix together wet and dry ingredients. Fold in chocolate chips.
  • Pour pancake mix into mini muffin pan and bake for 10-12 minutes. Remove from oven and allow to cool for 1-2 minutes.
  • Optional: Serve with maple syrup and whipped cream.

Notes

Tip: Make sure that you are not adding your egg right to the warm butter! You don't want scrambled eggs in your muffins. I would add the butter to a bowl with the cold mix and mix first then add in the egg.
