Creamy Smoked Sausage Spinach and Potato Soup
Creamy Smoked Sausage, Spinach, and Potato Soup is a hearty, filling soup that you will make over and over!
- 2 tbsp Butter
- 1 Onion diced
- 12 oz Smoked sausage
- ½ tsp Salt
- ¼ tsp Pepper
- 1 tbsp Garlic minced
- 3 cups Yellow potatoes cubed
- 32 oz Chicken broth
- 1 tsp Oregano
- ¼ tsp Cayenne pepper
- ¾ cup Half and half
- 3 cups Spinach torn
Melt butter a large pot. Add diced onions, smoked sausage, salt, and pepper. Stir occasionally and allow to cook for 2-3 minutes. Add in minced garlic
Add potatoes and then add chicken broth. Season with oregano and cayenne pepper and bring to a boil.
Reduce heat and allow to simmer for 10-15 minutes until potatoes are tender and cooked through. Add in half and half and spinach and cook for 3-4 more minutes before serving.
- Tip: Adding minced garlic too early will cause it to burn so I like to add it in last.
