Cucumber Quinoa Salad

Ingredients
  

  • 1 cup Quinoa (2 cups cooked)
  • 1 Cucumber
  • ½ Red onion
  • ¾ cup Feta cheese (crumbled)
  • ¼ cup Balsamic vinaigrette

Instructions
 

  • Cook quinoa according to directions. Rinse with cold water then place in the fridge to chill. 
  • Meanwhile dice cucumbers and red onions. Once chilled add to quinoa with feta cheese and toss to mix. Drizzle on balsamic vinaigrette and toss again to coat. 
  • Chill longer is needed then serve.
