Jennie Duncan
Seasoned with cinnamon and nutmeg these Walnut Oatmeal Spice Muffins have the perfect flavor. Nothing taste better with a side of coffee in them morning.

Ingredients

  • 1 cup Rolled oats
  • 2 ⅔ cups Flour
  • cup Sugar
  • cup Brown sugar
  • 2 tablespoons Baking powder
  • ½ teaspoon Salt
  • 2 teaspoon Ground cinnamon
  • ¼ teaspoon Ground nutmeg
  • 2 Eggs
  • ½ cup Vegetable oil
  • 1 ½ cups Milk
  • 1 ½ cup Chocolate chips
  • 1 cup Walnuts (chopped)

Instructions

  • Preheat oven to 400 degrees. Prepare a muffin tin with non stick cooking spray or muffin tin liners.
  • Whisk together oats, flour, sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large mixing bowl. In a separate bowl beat eggs then add it to dry ingredients.
  • Add milk and oil to the large mixing bowl with ingredients and mix until combined. Fold in crushed walnuts. Let sit 30-35 minutes to allow oats to soften.
  • Spoon dough into each muffin tin about ¾ way full. Bake for 17-18 minutes or until muffins are cooked though and a toothpick can come out clean.
