I love this creamy Potato Soup Recipe.

  • 8 cups Russest potatoes (peeled and diced)
  • ½ cup onion (diced)
  • 32 oz chicken broth
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 1 ½ cups half and half
  • ½ cup sour cream
  • 2 tablespoons butter

Optional toppings: cheese, bacon, and green onion.


    • Place peeled and diced and onions into a large pot and cover with chicken broth. Allow to cook until potatoes are tender. 
    • Use a potato masher to start to mash potatoes. Once potatoes are tender add in remaining ingredients in the order listen. 
    • For a thicker soup serve now. For a creamy soup (like in the pictures) continue to mash or use an immersion blender. 
    • Serve topped with shredded cheddar cheese, cooked and crumbled bacon, and diced green onions.
