  • 4 chicken breast (pounded)
  • 3 large sweet potatoes
  • 6 tablespoons olive oil
  • 1.4 oz zesty Italian seasoning (two packets)
  • 2 teaspoon brown sugar
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ½ teaspoon pepper


  • Preheat oven to 375 degrees F. Prepare a baking sheet with nonstick cooking spray and set aside. 
  • Pound your chicken so each breast is closer to the same thickness. This will help will even cooking.
  • Place chicken on your prepared baking sheet. Peel and slice sweet potatoes and place on your baking sheet with your chicken. 
  • In a small mixing bowl mix together olive oil with the seasoning. Drizzle this over chicken and sweet potatoes. Bake for 30-35 minutes or until chicken is cooked through and potatoes are tender. 


How to Pound Chicken:
To pound a boneless and skinless breast place it into a large freezer bag.
Use a rolling pin or something similar to pound chicken until flatten.
