This Cheesy Ranch Potato Casserole is my favorite side dish recipe. It pairs perfectly with any dinner and is loved my the entire family.

Ingredients
  

  • 32 oz frozen southern style hash brown potatoes
  • 2 tablespoons onions (minced)
  • 2 cups sour cream
  • 10.5 oz cream of chicken soup (1 can)
  • 4 tablespoons unsalted butter (melted)
  • 1 teaspoon dry ranch seasoning
  • 3 cups shredded cheddar cheese (divided)
  • ½ cup green onions (diced)

Instructions
 

  • Preheat oven to 350 degrees F and prepare a 9X13 casserole dish with nonstick cooking spray. 
  • Place all ingredients except for 1 cup of cheese and green onions into a mixing bowl and mix until well combined. 
  • Place your mixed ingredients into your prepared casserole dish. Top with remaining 1 cup of shredded cheese. Bake for 40-45 minutes.
  • Remove from oven and top with green onions then serve. 

Notes

Cooking Tip: I usually mix all my ingredients before adding it to the casserole dish. This will help from getting too much food around your dish that will burn.
Make Ahead Directions: You can make mix this recipe the night before or up to two days and keep in the fridge.
When you are ready to serve just place in the oven to back according to the recipe directions.
