Lemon Herb Roasted Potatoes
These Lemon Herb Roasted Potatoes are the BEST roasted potato recipe. They are so simple to make and full of amazing flavor. I toss them in oil and lemon juice then season them. They go into the oven and it's all done in less then 1 hour.
- 2 pounds Yukon gold potatoes
- 2 tablespoons oil
- 1 small lemon (juiced)
- ½ teaspoon rosemary (dried)
- ½ teaspoon oregano (dired)
- ¼ teaspoon dill (dried)
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ⅛ teaspoon garlic powder
Preheat oven to 400 degrees F. Prepare a baking sheet with nonstick cooking spray or foil.
Wash and slice potatoes. Place them in a large mxing bowl.
Add oil and the juice from 1 lemon to your potatoes and mix to coat potaotes.
Add all seasonings to potatoes and mix to coat potatoes again.
Pour seasoned potatoes onto your prepared baking sheet. Bake for 40-45 minutes or until potaotes are tender and crispy.
How to keep roasted potatoes from getting soggy:
When roasting any vegaetable you want to make sure that you don't create anything that could cause stem. For example covering the pan with foil can trap the air and cause steam or placing potatoes on top of each other. Place your potatoes on a large baking sheet and spread them out.
You can also remove them from the oven half way thought and flip them to make sure all sides are crispy.
How to reheat roasted potaotes:
You can reheat two different ways to make sure you keep your potatoes crispy and warm though.
- Oven: Place on a baking sheet and bake at 400 for 10-15 minutes
- Stove top: Place 1 tablespoon of oil in a skillet over medium heat. Add potaotes and cook while moving potatoes around for 5-8 minutes until warm though.
