- 24 uncooked jumbo pasta shells
- ¼ cup unsalted butter
- ¼ cup all-purpose flour
- 2 cups chicken broth
- ½ cup half and half
- 8 oz cream cheese
- 1 oz ranch seasoning mix
- 2 cups chicken (cooked and shredded)
- ¾ cup bacon (cooked and crumbled)
- 1 cup cobly jack cheese (shredded)
Preheat oven to 350 degrees F. Prepare a 3 quart baking dish with nonstick cooking spray.
Cook pasta shells according to package directions. Drain and then set aside. (tip run with cold water to cool to touch)
In a sauce pan melt butter over medium heat. Whisk in flour until smooth and bubbly about 1-2 minutes. Slowly add in broth while whisking.
Slowly add in half and half and then cream cheese. Stir until creamy and smooth then season with ranch seasoning mix.
Add 2-3 spoon fulls of mixture to the bottom of your casserole dish.
To the remaining mixture add in cooked chicken and cooked bacon then mix.
Spoon this mixture into each pasta shell then place in your casserole dish.
Top all stuffed shells with shredded cheese. Bake 25-30 minutes. Remove from oven and serve. Optional: garnish with fresh parsley.
Once cooked and drain I like to run cold water through my pasta. This way it's cool to the touch when you are ready to stuff.
Serving Options:
For garnish I topped mine with fresh chopped parsley.
You can serve with with steamed veggies, salad, or garlic bread.
