This Coffee Cake is a classic. This recipe was passed down from my grandma and uses pancake mix as a base. It's so simple to make and taste great.

Coffee Cake:
- 2 cups pancake mix
- ⅔ cup milk
- 2 tablespoons sugar
- 1 large egg
Streusel Topping:
- ⅓ cup pancake mix
- ½ teaspoon ground cinnamon
- ⅓ cup brown sugar
- 2 tablespoons cold butter
Preheat oven 375 degrees F. Prepare a 2-quart baking dish with nonstick cooking spray.
Mix together pancake mix, milk, sugar, and egg until combined. Pour batter into your prepared baking dish.
Next prepare your streusel topping. Place all ingredients in a small mixing bowl. Break up the butter and mix until your topping is crumbly. Sprinkle on the top of your cake.
Bake for 18-22 minutes or until cooked through. Add a fork or toothpick to the center to check for doneness. When it comes out clean it is cooked through. Slice, serve, and enjoy.
Make sure your butter is really cold. Leave it in the fridge until it's time time to use. I usually use my fingers to mix and pinch until it's crumbly
Does Coffee Cake have coffee in it? No, coffee cake doesn't actually have coffee in it. It's just traditionally served with coffee which is how it gets it's name.
