This Cheesy Ranch Chicken and Rice Casserole is one of my family's favorite dinner recipes. It's so simple to make and a great dinner when you are short on time.
Preheat the oven to 350 degrees. Prepare a casserole dish with nonstick cooking spray then cook rice according to package directions.
In a large mixing bowl mix cooked chicken, cooked rice, cream of chicken soup, ranch seasoning, and 1 cup shredded cheddar cheese. Add this to the prepared casserole dish.
Top with remaining 1 cup of cheese and bake for 15-20 minutes.
Remove from oven and serve warm. Optional: Top with fresh diced parsley for garnish.
