Cheesy Ranch Chicken and Rice Casserole

This Cheesy Ranch Chicken and Rice Casserole is one of my family's favorite dinner recipes. It's so simple to make and a great dinner when you are short on time.

Ingredients
  

  • 3 cup cooked and shredded chicken
  • 2 cup instant rice
  • 22.6 oz cream of chicken soup
  • 1 oz ranch seasoning
  • salt and pepper (to taste)
  • 2 cup cheddar cheese (shredded)

Instructions
 

  • Preheat the oven to 350 degrees. Prepare a casserole dish with nonstick cooking spray then cook rice according to package directions.
  • In a large mixing bowl mix cooked chicken, cooked rice, cream of chicken soup, ranch seasoning, and 1 cup shredded cheddar cheese. Add this to the prepared casserole dish.
  • Top with remaining 1 cup of cheese and bake for 15-20 minutes.
  • Remove from oven and serve warm. Optional: Top with fresh diced parsley for garnish.

Notes

  • Time Hack: Grab a rotisserie chicken from the grocery store to use as your cooked shredded chicken.
