This Cream Cheese Ritz Cracker Casserole is the best recipe ever. It's so simple to make and my family's favorite recipe.

  • 1 cup instant rice (uncooked)
  • 2 tablespoons unsalted butter
  • 2 medium chicken breast (skinless and boneless)
  • ½ cup onion (diced)
  • 8 oz cream cheese
  • 10.5 oz cream of chicken soup
  • ½ teaspoon onion powder  (or to taste)
  • ¼ teaspoon garlic powder  (or to taste)
  • ¼ teaspoon salt  (or to taste)
  • teaspoon pepper  (or to taste)
  • 1 sleeve Ritz Crackers (crushed)
  • 6 tablespoons unsalted butter (melted)


  • Preheat the oven to 350 degrees. Prepare a casserole dish with nonstick cooking spray and set aside.
  • Cook rice according to package directions then set aside.
  • In a skillet heat 2 tablespoons unsalted butter on the stove top over medium / high heat.
  • Dice Chicken into bite size pieces and add to skillet to cook. Once the chicken is almost cooked add in diced onions.
  • Once chicken is cooked through and onions are tender add in cream cheese and cream of chicken soup. Cook until cream cheese is melted and creamy.
  • Season with garlic powder, onion powder, salt, and pepper. Mix in prepared rice then place all of this in the prepared casserole dish.
  • Crush Ritz crackers and place them on the casserole.
  • Pour on melted butter evenly over crackers.
  • Place in the oven to bake for 20-30 minutes. Remove from the oven and serve warm.


Tip: I used a 2-quart casserole dish.
