Chocolate Chip Pumpkin Bars

These Chocolate Chip Pumpkin Bars are so soft and moist. They are full of pumpkin flavor and loaded with chocolate. One of the best fall recipes!

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 2 cups chocolate chips or chunks

Instructions
 

  • Preheat oven to 350 degrees. Prepare a 9x13 casserole dish with nonstick cooking spray or parchment paper.
  • Use an electric mixer to cream together butter and sugar. Once creamy and smooth add in the egg, vanilla extract, and pumpkin puree.
  • In a separate bowl whisk together flour, baking soda, salt, and pumpkin pie spice.
  • Slowly add your dry ingredients to your wet until well combined. Fold in chocolate chips.
  • Place in your prepared casserole​ dish. Bake for 35 minutes or until bars are cooked through. Remove from the oven and allow to cool then serve and enjoy.

Notes

Storing Directions:

To store these Chocolate Chip Pumpkin Bars place them in an airtight container and store them at room temperature for 5-6 days.
To freeze them place them in a large freezer bag and leave int he freezer for up to 6 months.

Cooking Tip:

To ensure that your bars are cooked try using a toothpick to insert and see if it comes out clean without uncooked dough. Chocolate will smear but there should not be dough on the toothpick when done.
