Air Fryer Vegetables

These Air Fryer Vegetables are roasted perfectly and in half the time it takes to roast veggies in the oven. Use any veggies you like for this medley, but I specifically love bell peppers, red onions, broccoli, and zucchini.

Ingredients
  

  • 1 large bell pepper (I used red)
  • ½ medium red onion
  • 1 cup broccoli (cut into florets)
  • 1 small zucchini
  • 1 tablespoon oil
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried parsley
  • salt and pepper (to taste)

Instructions
 

  • Preheat air fryer to 350 degrees F.
  • Dice veggies and place them into a mixing bowl.
  • Add oil to veggies and toss to coat. Add in seasoning and again toss to coat.
  • Place seasoned veggies into your air fryer basket in a single layer.
  • Cook for 6 minutes then remove basket and shake.
  • Place basket back into air fryer and cook for an additional 3-5 minutes or until veggies are tender. Once cooked remove from air fryer basket and enjoy.

Notes

Cooking Tip: The shake just moves the veggies around and allows the heat to cook the veggies evenly throughout.
Can I store and reheat these Air Fryer Vegetables?
Unfortunately, this is not a side dish that stores well or reheats well.
Even cooking these vegetables in the air fryer, they do not reheat well.
I recommend making enough for the meal, and not making any extras. Air Fryer Vegetables generally get soft and soggy once stored in the refrigerator.
