Football season is almost here which means Sunday afternoons with friends and family and a lot of yummy game day food! I love these Bite-Sized Potato Skins for parties. The perfect size to try without having to each a large amount.

- 5 large russet potatoes
- 2 tablespoons olive oil
- 2 teaspoon salt
- 1 ½ cup shredded cheddar cheese
- ½ cup bacon (cooked and crumbled)
- ⅓ cup green onions (diced)
Preheat the oven to 400 degrees F. Prepare a baking sheet with foil. Wash potatoes then slice into about ½ inch slices and place on a greased baking sheet. Wash potatoes then slice into about ½ inch slices and place on a greased baking sheet. Drizzle with oil and then sprinkle with salt.
Place in the oven and cook for 10-15 minutes, remove from oven and flip potatoes. Place back into the oven for 10-15 more minutes or until potatoes are tender. (Time will vary depending on how thick or thin you end up cutting your potato. The thinner they are the less time they will take.)
Top with shredded cheese and place them back into the oven just until cheese is melted.
Remove from oven and top with cooked and crumbles bacon and green onions.
