No Bake Mini Cheesecakes

No Bake Mini Cheesecakes are a great, easy to make dessert that is light and airy compared to a tradition baked cheesecake. Top them with your favorite choice of fresh fruit like blueberries, strawberries and raspberries.

Ingredients
  

Crust:

  • 1 cup graham crackers crumbs
  • ½ stick butter salted (melted)
  • 2 tablespoons brown sugar

Cheesecake Filling:

  • 6 oz cream cheese (softened)
  • 8 oz whipped topping (thawed)
  • cup granulated sugar
  • 1 teaspoon vanilla extract

Topping:

  • whipped cream
  • fruit ( I used strawberries, blueberries, and raspberries)

Instructions
 

  • Start by preparing a muffin tin with 12 cupcake liners and then set it aside.
  • Pulse graham crackers in a food processor or blender until they form a fine texture.
  • Add melted butter and brown sugar in the processor with your graham cracker crumbs and mix well.
  • Scoop about 1.5 tablespoons of the crumb mixture into each cupcake liner then press crumbs firmly into place with the back of the spoon. Place the muffin tin in the refrigerator to set.
  • Using a stand mixer or a hand mixer to blend softened cream cheese until creamy and smooth. Mix in sugar and vanilla and mix until thoroughly combined.
  • Gently fold in the whipped topping to your cream cheese mixture.
  • Take the muffin tin out of the refrigerator then fill each liner with the cream cheese mixture. Level each mini cheesecake with a butter knife.
  • Place the tin with mini cheesecakes back into the refrigerator for 4 hours to allow the cheesecakes to set.
  • Once set top with (optional) whipped cream and fresh fruit.

You can change these No Bake Mini Cheesecakes up a variety of different ways. Try some of these options out:
Topping: 
Use any variation or combination of fresh fruits. May a Strawberry Syrup to drizzle on top. Top with candies or chocolate chips. Caramel or chocolate syrup are good drizzled on top as well.
Crust:
Vary your crust as well by crushing different cookies to make the crust. Try crushing Vanilla Wafers or Oreos to make the crust.
