No Bake Mini Cheesecakes are a great, easy to make dessert that is light and airy compared to a tradition baked cheesecake. Top them with your favorite choice of fresh fruit like blueberries, strawberries and raspberries.
Cheesecake is a classic dessert that is loved by many. I love making easy No Bake desserts so these No Bake Mini Cheesecakes are a really easy dessert to make!
No-Bake Mini Cheesecakes are perfect for satisfying your sweet cravings without having to use an oven. These tasty treats are easy to make and can be customized with your favorite toppings such as fresh berries, chocolate shavings, or a drizzle of caramel sauce.
These cheesecakes have a smooth cream cheese filling with a crunchy graham cracker crust. These individual cheesecakes are perfect for any occasion and take no time at all to make. These mini cheesecakes are light and airy. They are the perfect spring or summer dessert.
How to make No-Bake Mini Cheesecakes:
This recipe for No Bake Mini Cheesecakes is really simple to make. With not having to bake the cheesecake filling it makes these a lot easier than a classic cheesecake. Prepare your graham cracker crust and your cheesecake filling.
Fill in your muffin tin to make the Mini Cheesecakes. Allow them to chill in the refrigerator for 4 hours before serving.
When ready to serve top the Mini Cheesecakes with your favorite sliced fruit. Enjoy!
Ingredient Notes:
Crust:
- Graham Cracker Crumbs – crushed and pulse in a food processor.
- Butter Sticks – Salted butter. Melted.
- Brown Sugar – packed.
Cheesecake Filling:
- Cream Cheese – softened.
- Whipped Topping – thawed.
- Granulated Sugar
- Vanilla Extract
Topping:
- Whipped Cream
- Fruit – I used strawberries, blueberries and raspberries.
Directions:
Step One – Start by preparing a muffin tin with 12 cupcake liners and then set it aside.
Step Two – Pulse graham crackers in a food processor or blender until they form a fine texture.
Step Three – Add melted butter and brown sugar in the processor with your graham cracker crumbs and mix well.
Step Four – Scoop about 1.5 tablespoons of the crumb mixture into each cupcake liner then press crumbs firmly into place with the back of the spoon. Place the muffin tin in the refrigerator to set.
Step Five – Using a stand mixer or a hand mixer to blend softened cream cheese until creamy and smooth. Mix in sugar and vanilla and mix until thoroughly combined.
Step Six – Gently fold in the whipped topping to your cream cheese mixture.
Step Seven – Take the muffin tin out of the refrigerator then fill each liner with the cream cheese mixture. Level each mini cheesecake with a butter knife.
Step Eight – Place the tin with mini cheesecakes back into the refrigerator for 4 hours to allow the cheesecakes to set.
Step Nine – Once set top with (optional) whipped cream and fresh fruit.
Can I make these Mini Cheesecakes ahead of time?
Yes, you definitely can make these ahead of time. Store them in an airtight container for up to 3 days in the refrigerator.
I would recommend not putting the fruit on top of the cheesecakes until you plan on serving them.
Can I freeze the Mini Cheesecakes?
Yup, you can freeze these as well. Once they are made and set, wrap each individually in plastic wrap.
Place them in a freezer safe airtight container and store in the freezer for up to a month.

You can change these No Bake Mini Cheesecakes up a variety of different ways. Try some of these options out:
Topping:
Use any variation or combination of fresh fruits. May a Strawberry Syrup to drizzle on top. Top with candies or chocolate chips.
Caramel or chocolate syrup are good drizzled on top as well.
Crust:
Vary your crust as well by crushing different cookies to make the crust. Try crushing Vanilla Wafers or Oreos to make the crust.
