Chocolate Chip Scones

- 2 cups pancake mix
- 1/2 cup semisweet chocolate chips
- 1/3 cup heavy whipping cream
- 4 tablespoons sugar
- 1 large egg
- 1 teaspoon vanilla
Preheat oven to 425 degrees F. Prepare a baking sheet with parchment paper or nonstick cooking spray.
Stir together pancake mix, chocolate chips, whipping cream, just 3 tablespoons of sugar, egg, and vanilla. Mix until a dough has formed.
Form and pat dough into a circle on your prepared baking sheet. (tip: rub extra pancake mix on fingers to help with sticky dough). Once you formed your circle sprinkles the remaining 1 tablespoon on sugar on top.
Cut your dough unto 8 slices but do not separate them.
Bake for 12-14 minutes or until golden brown. Remove from oven and slice to separate slices. Serve warm and enjoy.
- Tip: Dip your fingers in extra pancake mix to help with sticky dough.
